We recently discovered a gorgeous smoked cheese - that hubby used to make a delicious entree with portobello mushroom and small pork medallions (topped off with caramelised apple) so there were a couple of slices spare and I fancied some for breakfast but didn't want just cheese on toast - also coming in at 80 cals a slice (although not bad for such a creamy cheese it was too much to two slices) I needed something else to bolster up the quantity without going over in calories- mushrooms are perfect!
This gastro Sunday breakfast comes in at just 165. Leaving room for nice cup tea and my evening primrose capsule.
Low cal toast -51
Half teaspoon Light spread - 11
60g (handful) mushrooms - 13
Slice smoked cheese -82
3 Cherry tomatoes - 8
