This is such a simple quick dish - easy to amend for one person or four - and for a microwave dinner it is super healthy!
The Salmon can be quite calorie intense per 100g (about 200 calories) so just watch the size of the fillet.
Per serving:
100g Salmon = 200
1 leek =
60g (about 8) cherry tomatoes
1/2 Tbs olive oil (could use less) = 60
1/2 Tbs clear honey
1/2 Tbs whole grain mustard
1/2 Tbs lemon juice
Put the sliced leek in microwave dish with tablespoon of water and cover with cling film (pierced) cook on high (850W) for 3min (for four servings so less time for one serving).
Mix up the dressing ingredients and add salt & pepper.
Scatter halved cherry tomatoes over leek then pour half dressing over them.
Place Salmon fillet on top with rest of dressing.
Replace cling film. Cook on high for 9minutes (less if doing single serve)
Allow to rest a minute then serve!
