Sweet chilli & mayo Prawn Salad

Last night, wanting something different for lunch and having done soup with wholemeal roll, roast chicken sandwich and my spilt salad this week, I went to the freezer for inspiration. Thinking I could defrost one of my left over meals (all saved as servings of less than 400 calories) or grab a microwave ready meal. Then I spotted one of those bags of frozen king prawns - cooked and peeled. The whole bag (225g) comes in at just 170 calories and packs an amazing 35g of protein. Now that is a 'fuller for longer' meal. So I got the bag out to defrost for the next day then set about preparing the base and sauce. Put some lettuce leaves in one pot (8 calories), cherry tomatoes in another (22) and then in a small tub (I use my old baby food storage units) mixed a tablespoon of sweet chilli sauce (32) and tablespoon of light mayo (42).

Today I drained the prawns, gave them a wee blast in the microwave so they weren't too cold to eat, placed them on the lettuce with the tomatoes and poured over the sauce. Devine!

Perfect light meal at 275 calories.
